Chia Seed Pudding

Chia pudding is a simple and nutritious dish that can be enjoyed as a breakfast, snack, or dessert. Chia seeds are the richest whole food source of Omega-3s, which have many great health benefits. Omega-3s are also vital for brain function, supporting cognitive health, and reducing the risk of neurodegenerative diseases. Additionally, they have anti-inflammatory properties that can help manage conditions like arthritis and improve overall joint health.

  • 3 tablespoons of chia seeds
  • 1 cup of milk (regular milk, almond, coconut, soy, etc)
  • 1 teaspoon of sweetener (honey, maple syrup, agave nectar, or stevia), optional
  • 1/2 teaspoon of vanilla extract
  • Fresh fruits, nuts, or other toppings of your choice

In a medium-sized bowl or jar, combine the chia seeds, vanilla extract, and milk. If you are using sweetener, mix that in as well.

Stir the mixture thoroughly to ensure the chia seeds are evenly distributed.

If using a jar, you can also secure the lid and shake well.

Cover the bowl or jar and place it in the refrigerator. Let it sit for at least 2 hours, or overnight for the best results. The chia seeds will absorb the liquid and expand, forming a pudding-like consistency.

Before serving, give the pudding a good stir. If it is too thick, you can add a bit more milk to achieve your desired consistency.

Top your chia pudding with fresh fruits, nuts, seeds, granola, or any other toppings you like.
